Scrambled Egg Recipe

Scrambled Eggs
- 2 - Beaten eggs
- 1/2 tsp-Mustard seed
- 1/4 tsp-Turmeric powder
- 1/4 tsp-Chilly powder
- 1 small slice-Ginger finely chopped
- 2 medium - Onions finely chopped
- 2 medium-Tomatoes finely chopped
- 3 nos - Green chillies chopped
- 1 stalk-Curry leaf chopped
- salt to taste
- Oil
Method of preparation
- Take a pan and heat the oil and splutter the mustard seeds.
- Add the chopped onions, ginger, green chillies and saute till the onion becomes half soft.
- Add chopped tomatoes and saute till its juice separates from tomatoes.
- Add the turmeric powder, chilly powder, salt and mix well.
- Add beaten eggs and stir continuously with your spatula.
- Add half curry leaves and a quick stir.
- Garnish scrambled eggs with the other half curry leaves.
Tip: To make the onions soft in the pan quickly you can add a pinch of salt at the very beginning while you add chopped onions to the wok and stir.
